Scalloped Corn
Description
Scalloped corn is an amazing side dish that can be served at any occasion, particularly Thanksgiving. There's nothing better than some scallped corn to go on the side along with turkey, stringbeans and mashed potatoes! It's also a savory way to utilize any frozen vegetables you may have sitting in your freezer. It's best to avoid canned, however, as this can create too much sodium and ruin the taste. A great dish for cheese and cracker lovers, as it is included right in the dish.
This recipe is tasty, beginner friendly, and highly enjoyable for family get togethers. With that, let's get started!
Ingredients
- 3 eggs
- 1 cup half & half
- 1 tbsp granulated sugar
- 1 tsp salt
- 5 cups corn kernels (thawed if frozen)
- 1 1/2 cups butter crackers (such as Ritz), crushed
- 1 1/2 cups shredded white cheddar
- 4 tpsp melted butter
- 2 tbsp chopped parsley
- cooking spray
Instructions
- Preheat oven at 325F. Coat ~2-3 qt baking dish with cooking spray.
- Place eggs & half & half in large bowl, wisking until smooth.
- Add sugar, salt, corn kernels, 1/2 cup cracker crumbs & 1 cup cheese to bowl, mixing until combined.
- Spread corn mixture into the prepped baking dish.
- Bake for ~30-35 min or until casserole edges are set.
- Mix together remaining 1 cup of cracker crumbs and butter.
- Sprinkle buttered cracker crumbs and remaining 1/2 cup cheese over corn mixture.
- Bake for additional ~20-25 min, or until casserole is set and browned. Sprinkle parsley & sit for 5 minutes before serving.
