Beef Stew
Description
Beef stew is an amazing dish for those who
enjoy a warm, hearty meal. Great for the winter season,
or any time there is a bout of cold weather. Best made using a pressure cooker,
to enhance flavor. Seasoning can be added to taste. A favorite during Christmas,
or any holiday.
If you have a taste for soups and stews, then this recipe is for you. Great if you
want practive with using spices. Don't worry, this recipe is not spicy, it's a savory dish.
Pressure cookers are not required for this recipe, but it is highly encouraged.
Ingredients
- Flour
- 4 1/2 lbs beef cubes
- 4 large carrots
- 3 lbs russet potatoes
- 2 lbs fresh tomatoes
- 2 small bags of frozen pearl onions
- 2 cups frozen peas
- 1 small can of tomato paste
- 2 quarts beef broth
- vegetable oil (as needed)
- 2 small cans sliced mushrooms (include liquid)
- salt
- pepper
- garlic powder
- thyme
- rosemary
- 1 bay leaf
Instructions
- Chop all fresh vegetables & mix (frozen comes later).
- Coat bottom of instant pot with oil & push sautee button.
- Coat ~2 handfulls of beef cubes with flour& brais with oil in instant pot. Brown all sides (but don't cook them, only quickly brown).
- Set aside & repeat untill all beef is browned, adding oil as needed.
- Scrape bottom of instant pot with wooden spatula to remove as much flour as possible.
- Add 1/2 of the fresh veggies, 1 quart beef broth, 1/2 of the beef cubes, 1 bag pearl onions, 1/2 can of tomato paste.
- Season with salt, pepper, garlic powder, thyme, rosemary, & 1 bay leaf. Mix all ingredients.
- Seal lid on pot. Press stew button & set pot to 25 minutes.
- Repeat with the rest of the ingredients to make the second batch. Serve with warm egg noodles (pasta).
